Cocktail Turkey Meatballs in Cranberry BBQ Sauce

Using ground turkey will make your meatballs healthier without compromising taste. Adding in pine nuts adds a surprising crunch and serving them in cranberry sauce adds a festive touch.

Preparation: 20 minutes  
Time-To-Table: 35 minutes  
Serves: Makes about 4 dozen
Ingredients:

Meatballs Ingredients:

  • 1 package (20 ounces) lean ground turkey
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup finely chopped onion
  • 1/4 cup (2oz.) Better'n Eggs®
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons pine nuts, chopped, optional
  • 1/2 teaspoon salt

Cranberry Sauce Ingredients:

  • 1 cup jellied cranberry sauce
  • 1 cup barbeque sauce
  • 1/3 cup apple juice
  • 1/4 teaspoon ground ginger

Better'n Eggs

Instructions:
    1. Heat oven to 375°F. Line 15x10x1-inch baking pan with aluminum foil. In large bowl mix together meatball ingredients. Form into 1-inch balls; place on prepared pan.

    2. Bake for 12 to 15 minutes or until meatballs are no longer pink in center.

    3. Meanwhile, in 3 1/2 quart slow cooker or large saucepan whisk or stir together sauce ingredients. Cook on LOW until sauce is heated. Stir in meatballs. Serve with toothpicks.

    Tip: Meatballs will hold in slow cooker for up to 2 hours. Stir occasionally.
